soup
Soup season is here. I am looking for some new soup recipes...but want ones that have a small amount of ingredients. My current favorite is black bean soup, which calls for 2 cups chicken broth, 1 can black beans(rinsed), 1 onion, a couple of cloves of garlic, a small amount of cumin and oregano, and a couple teaspoons of olive oil. You chop the onion and garlic, saute it in olive oil with the cumin and oregano, then add chicken broth and the black beans and cook awhile. Do you have a simple soup recipe to share?

I have one on my blog. I posted it in October titled...soup and sweater weather. Very easy split pea soup in the crock pot. Let me know how it turns out. :)
Fall and soup, don't they just go together? Ahhh... My current favorite is Tortilla Soup. I just throw in any Mexican ingredients that I have on hand--beans,tomatoes,chicken,olives, onions, corn,salsa---just whatever, it's always good. Then after it heats up put tortilla chips and cilantro (maybe sour cream) on the top. Great and easy!
I love my chicken wild rice soup.
about 3c. wild rice
3 cooked chicken breasts
carrots, celery and onion sauted in butter
about 3 c. chicken stock
milk to desired volume.
about 15-20 slices of BONGARD's American cheese (the best American cheese)
lots of dill weed
salt and pepper to taste.
simple soup?
the simplest (is that a word) soup i ever found, was:
1 can of stewed tomatoes (it has all the spices)
1 can of canned mushrooms
1 can of frenched green beans
dump into pot - juices as all
add S&P a bit of worcestershire sauce
cook up...
voila.... SOUP'S ON!!

it's not creative
it's not special
but it's soup.... and it works
Just about everyone who tries this garlic soup likes it:
Saute two or three sliced cloves of garlic in olive oil. Add a 14 oz. can of diced tomatoes, a few handfuls of chopped parsley, and three cups chicken stock. Season with cayenne pepper to taste. Simmer for about an hour. Enjoy with good bread.
