Good Bite Weeknight Meals

Good Bite Weeknight Meals is a book I stumbled across at the library last week. There are 120 recipes from the Good Bite website. Last night I made supper (chickpeas and spinach) in less than ten minutes. It was a decent, simple meal that I will make again. There are at least three more recipes I plan to try in the next week-one for chalupas, another for a hamburger and macaroni casserole, and the third is for cheese tacos. The subtitle, Delicious Made Easy, is appropriate because you don't need to buy a dozen special ingredients for each recipe. Have you tried any new recipes lately?

Sounds like a good book for you. Last week I made curried cauliflower soup with cilantro. Because it's quick and tasty, I plan to make it again soon.

Have you tried 3-2-1 Cake?

1 box angel food cake mix
1 box cake mix (any flavor)

Mix dry cake mixes together in a gallon ziplock bag. Store in bag.

To use: Place 3 T cake mix in a microwave safe cup and stir in 2 T water. Microwave 1 min. Makes 1 serving.

I made chicken noodle soup with Japanese noodles the other week when family was visiting and it was a rainy day. Turned out great!

Chicken wonton soup and fried wontons. Takes awhile to fold them up, but worth it. Stuff with minced chicken & onions, Then you put 1/2 in the soup w/soy sauce and green onions and the other 1/2 deep fry and dip in cocktail sauce. Delicious!
