surprises

I planted two gardens this year, one at my dad's and the other at the community garden plot.  Each year, I have tried to find one or two things that I have never grown before to experiment with.  This year I chose kale because it is healthy and spaghetti squash at the suggestion of a friend.  Both did well, but I now know that I do not need to plant the entire package of kale seeds.  The biggest surprise is that I actually like spaghetti squash.  I had never planted winter squash of any kind as I do not eat it.  Spaghetti squash proved to be different.  This week I ate it for the first time.  The squash was tasty-I ate it with spaghetti sauce.  It is now on my list of things to plant each year.

We like the spaghetti squash too so thanks for sharing your abundance. The recipe that the boys have eaten best was spaghetti squash pancakes: 1 cup roasted spaghetti squash, 2 eggs, 1 tablespoon softened butter, 1/4 cup whole wheat flour, 1 teaspoon salt, and 1/2 teaspoon baking powder. I suppose they liked them because they could put syrup on.

I preferred the savory ones I made with a higher ratio of squash plus ginger, cumin and coriander. Yum.

I love spaghetti squash with sauce as a main dish. I make it for my lunches often. Sometimes we add in meatballs.
Not a fan of kale, though I've had it in some protein shakes.
Fun story --every time we do have spaghetti we always quote your dad "remember noodles expand"
